Crisp cabbage salad with chilli, cottage cheese and orange

Finely shredded cabbage served with a dressing made from cottage cheese, lightly whipped cream and fresh chilli. The oranges and pears add a fresh fruitiness and toasted nuts give the salad a flavourful and crunchy heartiness.


  • 50 g Puck® Whipping Cream
  • 100 g Arla Organic cottage cheese 4,5 %
  • 15 g freshly chopped green and red chilli peppers
  • 4 g fine salt
  • freshly ground pepper
  • 350 g finely chopped red cabbage
  • 100 g finely chopped savoy cabbage
  • 100 g fillets from oranges – in small pieces
  • 100 g pears – in small pieces
  • 50 g roasted, roughly chopped hazelnuts
  • 10 portions

Whip the cream lightly, then fold in the cottage cheese, chilli, salt and freshly ground pepper. Stir in the cabbage along with the oranges and pears – set aside a few orange slices for garnish.

Arrange the salad in a large bowl. Garnish with oranges, pears and hazelnuts.
